Pani puri

Home made pani puri 😊😊😊😊 Recipe details- Ingredients: 1 cup Sooji 2 tsp All Purpose Flour Salt Oil Water Baking soda - a pinch Method: Mix all dry ingredients Sooji, salt ,soda and all purpose flour in a bowl. Add 1 tbsp of oil to it. Mix the ingredients again till all the dry ingredients become crumbly. Now add lukewarm warm to the above dry mixture little by little & form a medium soft dough. Let it rest for atleast 15- 20 minutes. After some times check the dough. If it has become hard, wet your hands a bit & knead the dough again for a minute. Now make very small balls of the dough say around 1cm in diameter. Roll each ball into a flat puri say around 3 cm in diameter. Roll it thin. While rolling a puri, cover the remaining dough with a damp cloth. Heat oil in a kadai Put the rolled out puris one by one in the hot oil. Keep the heat on medium level. Fry them till they are golden from all sides. Enjoy your tasty crunchy homemade pani puri.

Anarsa balls

Ingredients 4 cups rice 3 cups sugar powder 3 1/2 cups ghee 1 tbsp. Sesame seeds 1/3 cup milk Method:    1. Wash and soak rice in plenty of water.    2. Change water everyday, repeating process for 3 days.    3. Now, drain all water, and spread on a clean cloth for 3-4 hours.    4. Grind to powder and sieve.    5. Mix in sugar,and 2 tsp ghee press and keep aside for 2 hours.    6. Sprinkle milk little by little, kneading mixture into a soft pliable dough.    7. On a clean plastic sheet, sprinkle a few sesame seeds.    8. Take a round or any other sized ball of dough, press onto sprinkled seeds.   9.Heat 3-4 tbsp. ghee in a frying pan.   10. Let in one round, seeds side up.   11. Shallow fry on low flame, till golden brown.   12. Drain and keep aside.   13.  Repeat for remaining dough, add more ghee as required.   14. Gujrati Aloo

Ingredients  Poteto- 1/2 kg ( boiled) Mustard seeds- 1/2 tsp Cumin seeds- 1/2 tsp Turmeric powder- 1/4 tsp Red chilli powder - 1/2 tsp Salt - to taste Oil- 1tbsp Kari leaves - 3-4 Green coriander- 1/2 tsp ( chopped) Hing - 1 pinch Onion -1 ( chopped) Mango powder - 1/2 tsp Method Heat oil in saucepan; fry mustard seeds until they start to pop. Add the onion and continue frying on low heat until the onion turns a golden colour. Add the turmeric, cumin and chili powder, hing ,kari leaves, stir. Add the cooked potatoes and turn gently to coat well. Sprinkle with salt and mango powder. Cook only 3 -5 minutes. Garnish with green coriander.serve hot.

Stir fry noodles

Stir fry noodles  ingredients- Noodles- 1 pack (small size) Cabbage- 1 (shredded) Capsicum- 1 (sliced) Carrot - 1 (sliced) Vinegar- 2 tsp Green chilli - 2 ( chopped) Tometo sauce- 1 tbsp Onion- 1 ( sliced) Soya sauce- 2 tbsp Chilli sauce- 1 tbsp Red chilli powder - 1/4 tsp Black pepper powder - 1/4 tsp Oil - 2 tbsp Salt- to taste  Method- Boil noodles in enough water.do not over cook. Strain noodles through cold water 2-3 times and drain water and set aside,add few drops of oil to the noodles to avoid sticking. Heat oil in pan and add sliced onions and stir fry for 20-30 seconds.add all other vegetables and stir fry for 2 minutes. Add salt,black pepper powder and red chilli powder mix well.now add boiled noodles and mix well. Add vinegar,chilli sauce,soya sauce and tometo sauce,stir fry for a minute. Serve the vegetable noodles hot.

Garlic bread

Garlic bread  Ingredients- Oregano- 1/4 tsp Sugar- 1 tsp Flour- 2 cup Active dry yeast- 2 tsp Warm water- 3/4 cup Olive oil - 2 tbsp Salt - 1/2 tsp Cornmeal- 2 tbsp Mozzarella cheese - 2 cup Garlic salt - 1/2 tsp Garlic paste- 1/2 tsp Dried parsley - 1/2 tsp Method- Mix sugar and warm water together.add in yeast and allow to proof about 5 minutes. Add in olive oil. Add in flour and salt in mixer .mix until smooth and elastic. Place dough in bowl. Cover and allow to rise for about 1 1/2 hours. Mix together 1/2 cup mozzarella cheese and garlic salt,garlic powder and parsley. Preheat oven to 450 degree c .place a baking stone in oven while preheating or a cookie sheet turned upside down. Sprinkle with cornmeal. Divide dough in half and press out half of the dough into a square. Red sauce pasta

Red sauce pasta ingredients- Tomatoes- 2 cups ( blanched and finely chopped) Pasta- 1 cup ( boiled) Oil- 2 tbsp Blackpeppar- 6-8 Onions - 1/2 cup (chopped) Garlic- 1/2 tsp ( chopped) Capsicum- 1/2 cup ( chopped) Salt- to taste Tomato puree- 3 tbsp Dried oregano- 1 tsp Red chilli flakes- 1/2 tsp Fresh cream- 1/4 cup For garnishing- Processed cheese- 1 tbsp ( grated) Method- Heat the oil in a pan,add pepper and saute on a medium flame for 30 seconds. Add the onion and garlic and saute on a medium flame for 2 minutes. Add the capsicum and saute on a medium flame for 1 to 2 minutes. Add the tomatoes and salt mix well and cook on a medium flame for 4 to 5 minutes while stirring occasionally. Add the tomato puree, oregano,chilli flakes and mix well. sprouted moong chaat

Sprouted moong chaat Ingredients- Moong daal - 1 cup Salt - to taste Potato- 1 ( boiled, and  mashed) Onion - 1 ( chopped) Radish- 1 small ( grated) Fresh coriander- 1 tsp ( chopped) Green chillis- 2 ( chopped) Tometo- 1 ( chopped) Red chilli powder - 1 tsp Dry mango powder - 1/2 tsp Lemon juice - 1 tsp Tamarind water - 1 tsp Chaat masala - 1/2 cup Method- Soak moong dal for 10 - 12 hours and tie it in a muslin cloth. Leave it over night to sprout. Boil sprouted moong dal with pinch of salt and pinch of turmeric powder ( don't pressure cook)    Once boiled, drain the excess water. Add all ingredients mix well and enjoy tasty chaat.

moong dal vada

Moong dal vada Ingredients- Moong dal- 1 cup(split,wash) Potatoes- 1 cup (boiled, peeled) Cilantro- 2 tsp Ginger- 1 tsp ( grated) Cumin seeds - 1 tsp Asafetida - 1/8tsp Baking soda - 1/8 tsp Salt - to taste Oil- to fry Green chillies- 2 Method- Wash and soak dal in about 3 cups of water for four hours or longer. Grind dal coarsely using very little water. Add all the ingredients to the dal batter, potatoes, cilantro , green chilly, ginger, cumin seeds, asafetida, and salt, beat the batter for 2-3 minutes this will make the batter light. Add the water if needed.batter should be soft. Heat the oil in a frying pan on medium high heat. Place about 1 tsp of butter into the oil.fry the vada in small batches. Fry vadas until golden brown all around. Moong dal vada should be crispy from outside and should be soft inside. Serve them with mint sauce.

Paneer tikka

J Paneer tikka Ingredients- Paneer - 250 gms Butter -2 tbsp Carom seeds - 1/4 tsp Gram flour - 1 tbsp Yogurt- 1 cup Red chilly powder - 1/2 tsp Chaat masala powder- 1/2 tsp Turmeric powder- 1/4 tsp Lemon juice- 1 tsp Black salt- 1/4 tsp Dry mango powder- 1/4 tsp Mustard oil- 2 tsp Capsicum- 1 Tomato- 1 Onion- 1 Salt - to taste Garam masala- 1/2 tsp Ginger garlic paste- 1/4 tsp Method- Take yogurt in a bowl add roasted gram flour, ginger garlic paste, and spices red chilli powder, turmeric powder, garam masala, carom seeds ,black salt, lemon juice, salt, and paneer. Mix well. Cut the veggies and add in a marinade mix slowly.  Skewer the veggies and paneer in a skewer . Arrange them On a rack. 4. Keep in the oven for 180c for 10-15 minutes(convection mode).after 15 minutes removes from the oven,turn the skewers, brush some oil.( again 5-10minutes). 5. Serve with mint sauce and onion.

pasta in white sauce

Pasta in white sauce Ingredients - Pasta -  1/2 cup Butter -  1 tbsp Cornflour -  1tbsp Milk -  1/2cup Salt -  to taste Cream -  1/4 cup Black pepper -  1/2 tsp (crushed) Cheese -  2 slices Capsicum,onion -  1-1 small Method Cook pasta in boiling water in a pan add 1 tsp oil ,some salt & cook untill its done. For white sauce.  - heat1/2 tsp bitter in a pan , onion & capsicum saute for a minute .transfer to a bowl . Heat the remaining butter in a pan add cornflour & stir continuosly , till you feel that it is cooked . While stirring continuously add milk slowly & whisk nicely so that no lumps are formed ,let cook till it comes to a boil . Add salt ,pepper & the cheese slice as well . Add onion and capsicum at this stage . Add the cooked pasta and mix everything well . Serve hot with extra cheese garnishing .
