Anarsa balls



Ingredients



4 cups rice
3 cups sugar powder
3 1/2 cups ghee
1 tbsp. Sesame seeds
1/3 cup milk

Method:

   1. Wash and soak rice in plenty of water.
   2. Change water everyday, repeating process for 3 days.
   3. Now, drain all water, and spread on a clean cloth for 3-4 hours.
   4. Grind to powder and sieve.
   5. Mix in sugar,and 2 tsp ghee press and keep aside for 2 hours.
   6. Sprinkle milk little by little, kneading mixture into a soft pliable dough.
   7. On a clean plastic sheet, sprinkle a few sesame seeds.
   8. Take a round or any other sized ball of dough, press onto sprinkled seeds.
  9.Heat 3-4 tbsp. ghee in a frying pan.
  10. Let in one round, seeds side up.
  11. Shallow fry on low flame, till golden brown.
  12. Drain and keep aside.
  13.  Repeat for remaining dough, add more ghee as required.
  14. Cool very well for 5-6 hours before storing in airtight containers.

Fry vadas until golden brown all around. Moong dal vada should be crispy from outside and should be soft inside. Serve them with mint sauce.

Garlic bread

Garlic bread  Ingredients- Oregano- 1/4 tsp Sugar- 1 tsp Flour- 2 cup Active dry yeast- 2 tsp Warm water- 3/4 cup Olive oil - 2 tbsp Salt - 1/2 tsp Cornmeal- 2 tbsp Mozzarella cheese - 2 cup Garlic salt - 1/2 tsp Garlic paste- 1/2 tsp Dried parsley - 1/2 tsp Method- Mix sugar and warm water together.add in yeast and allow to proof about 5 minutes. Add in olive oil. Add in flour and salt in mixer .mix until smooth and elastic. Place dough in bowl. Cover and allow to rise for about 1 1/2 hours. Mix together 1/2 cup mozzarella cheese and garlic salt,garlic powder and parsley. Preheat oven to 450 degree c .place a baking stone in oven while preheating or a cookie sheet turned upside down. Sprinkle with cornmeal. Divide dough in half and press out half of the dough into a square. mutton nihari

Mutton  nihari Ingredients- Mutton - 1 kg Roasted gram flour - 2 tbsp Turmeric powder- 1/2 tsp Cinnamon stick - 1 Bay leaves - 2 Cardamom- 2 Cloves - 8 Garam masala - 2 tsp Ginger garlic paste - 2 tsp Chilly powder - 1 tsp Coriander powder - 1 tsp Yogurt- 2 tbsp Oil- 1/2 cup Nutmeg- few pinches Make it as a powder-  Fennel seeds - 2 tsp Black peppercorn - 1/2 tsp Cumin seeds - 1/2 tsp For garnishing- Ginger chillies - 3. ( chopped) Ginger strips - sliced Coriander leaves- 3 tsp Method- Clean the mutton and cut into medium pieces. Heat oil in a pan and add bay leaves , cloves, cinnamon stick and ginger garlic paste. Add the mutton and fry for  2 to 3 minutes. Now add red chilly powder, yogurt, garam masala and fry until the oil separates.
