Shami Kabab 


Ingredients-

  • Mutton pieces ( mince) - 250 gm
  • Chana daal - 1/2 cup ( soaked)
  • Ginger garlic paste- 1 tsp
  • Dry red chillies - 5-6
  • Onion - 1/2 cup ( chopped)
  • Garam masala powder- 1 tsp
  • Salt - to taste 
  • Green coriander- 1/2 cup chopped 
  • Green chilli- 2 ( chopped)
  • Egg - 1 ( beaten) 
  • Oil - for pan frying 

Method-

  1. In a medium pan boil meat with daal,ginger garlic paste,red chilli and salt.cook untill meat is cooked and all the water almost gone.
  2. Now grind it in a food processor.
  3. Mix in green coriander leaves,green chilli,egg and chopped onion.
  4. Divide mix into 8-10 equal portion from into 1/2 inch thick and 2 inch round patties.
  5. Pan fry with some oil on medium heat.when kababs are brown and crispy on both sides.
  6. Garnish with salads and lemon wedges.

Ingredients  • 1/4 cup Boiled Milk • 500 gm almonds  • 1/2 kg sugar Method 1. Start with soaking almonds in water for around 8-10 hours 2. pasta in white sauce

Pasta in white sauce Ingredients - Pasta -  1/2 cup Butter -  1 tbsp Cornflour -  1tbsp Milk -  1/2cup Salt -  to taste Cream -  1/4 cup Black pepper -  1/2 tsp (crushed) Cheese -  2 slices Capsicum,onion -  1-1 small Method Cook pasta in boiling water in a pan add 1 tsp oil ,some salt & cook untill its done. For white sauce.  - heat1/2 tsp bitter in a pan , onion & capsicum saute for a minute .transfer to a bowl . Heat the remaining butter in a pan add cornflour & stir continuosly , till you feel that it is cooked . While stirring continuously add milk slowly & whisk nicely so that no lumps are formed ,let cook till it comes to a boil . Add salt ,pepper & the cheese slice as well . Add onion and capsicum at this stage . Add the cooked pasta and mix everything well . Serve hot with extra cheese garnishing .

Balushahi

Ingredients- Fine flour ( maida ) 1 1/2 cups Soda - 1/4 tsp Ghee - 4 tbsp Yogurt- 6 tbsp Sugar - 2 cups Milk - 2 tbsp Pistachio- 8-10 ( chopped) Cardamom powder - 2 pinch for sugar syrup Method- 1.  Mix fine flour and soda into a large bowl. 2. rub four tbsp of ghee into the flour mixture with your fingertips till it resembles bread crumbs. 3. add the beaten yogurt and kneed into a soft dough.cover the dough for 15-20 minutes. 4. divide the dough into 10 equal portions and shape into smooth balls.make a slight dent in the centre of the ball with your thumb.keep the balls coverd. 5. heat ghee in a kadai on medium heat and fry balushahi balls on low heat. 6. take a pan and cook the sugar with one cup of water and cardamom powder and make sugar syrup.continue to cook till the syrup attains a two string. 7. remove the syrup from heat and soak the cooled balushahi in it for two hours. 8. gently remove the balushahi from the sugar syrup and place on a serving plate .decorate with pistach...
