Balushahi

Ingredients-

Fine flour ( maida ) 1 1/2 cups
Soda - 1/4 tsp
Ghee - 4 tbsp
Yogurt- 6 tbsp
Sugar - 2 cups
Milk - 2 tbsp
Pistachio- 8-10 ( chopped)
Cardamom powder - 2 pinch for sugar syrup


Method-

1. Mix fine flour and soda into a large bowl.
2.rub four tbsp of ghee into the flour mixture with your fingertips till it resembles bread crumbs.
3.add the beaten yogurt and kneed into a soft dough.cover the dough for 15-20 minutes.
4.divide the dough into 10 equal portions and shape into smooth balls.make a slight dent in the centre of the ball with your thumb.keep the balls coverd.
5.heat ghee in a kadai on medium heat and fry balushahi balls on low heat.
6.take a pan and cook the sugar with one cup of water and cardamom powder and make sugar syrup.continue to cook till the syrup attains a two string.
7.remove the syrup from heat and soak the cooled balushahi in it for two hours.
8.gently remove the balushahi from the sugar syrup and place on a serving plate .decorate with pistachio and serve.

mutton keema(mince) with potatoes Ingredients- Mutton keema( mince)- 500 gms Potatoes - 3 ( cut into cubes)  Onion- 2 (chopped) Ginger- 1 tsp ( minced) Garlic paste - 1 tsp Red chilli powder - 1 tsp Coriander powder- 1 tsp Turmeric powder- 1/2 tsp Garam masala powder- 1 tsp Salt - to taste Yogurt- 2 tbsp Tomatoes- 3 ( chopped) Oil- 2 tbsp Water- 2 cup For garnishing- Coriander leaves- 1/4 cup ( chopped) Green chillies- 2( sliced) Method- Heat the oil in a pan over a medium heat. Garlic bread

Garlic bread  Ingredients- Oregano- 1/4 tsp Sugar- 1 tsp Flour- 2 cup Active dry yeast- 2 tsp Warm water- 3/4 cup Olive oil - 2 tbsp Salt - 1/2 tsp Cornmeal- 2 tbsp Mozzarella cheese - 2 cup Garlic salt - 1/2 tsp Garlic paste- 1/2 tsp Dried parsley - 1/2 tsp Method- Mix sugar and warm water together.add in yeast and allow to proof about 5 minutes. Add in olive oil. Add in flour and salt in mixer .mix until smooth and elastic. Place dough in bowl. Cover and allow to rise for about 1 1/2 hours. Mix together 1/2 cup mozzarella cheese and garlic salt,garlic powder and parsley. Preheat oven to 450 degree c .place a baking stone in oven while preheating or a cookie sheet turned upside down. Sprinkle with cornmeal. Divide dough in half and press out half of the dough into a square.
